Stopped trying to make peace between Socket.IO and Gatsby

Gatsby uses Socket.IO underneath, and it uses an older version. I put on a brave face and learned more about CORS and handling different URLs with Socket.IO, but in the end I gave up.

NX seemed promising, but also felt a bit like overkill. So for now my Voting App and Gatsby Blog are going to live separate lives.
